Happy Friday! Here is a super easy recipe to try over the weekend. These Oatmeal Peanut Butter Energy Bites require no baking, no flour and almost no work. You can store them in the fridge and eat them throughout the week for a boost of energy. Enjoy!

1 cup rolled oats
1/4 cup ground flaxseed
1/4 cup almonds, chopped
2 tablespoons chia seeds
1/8 teaspoon cinnamon
1 tbsp salt
1/4 cup creamy peanut butter
1/4 cup honey
1/4 tsp vanilla extract
2 tbsp chocolate
1/4 cup ground peanuts or ground almonds
Combine oats, almonds, flaxseed, chia seeds, salt and cinnamon in a large bowl and stir.
Melt peanut butter in microwave for 30 seconds and allow it to cool slightly. Stir in honey and vanilla extract and mix. Pour peanut butter into oat mixture and mix well with a spoon then bring together with your hands. Once mixture is sticking together, fold in chocolate chips.
Roll dough into golf-ball sized balls. Roll outside of balls into the ground peanuts or ground almonds until coated. Enjoy at room temperature or store in the fridge on parchment paper.
